Potato Salad

Ingredients
  

  • 2 lbs Yukon Gold or red potatoes
  • 1 cup mayonnaise I prefer the Chosen Foods or Primal Kitchen brands
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 3 hard-boiled eggs chopped
  • ½ cup red onion finely chopped
  • ½ tsp salt
  • ¼ tsp ground pepper
  • Fresh parsley or dill optional for garnish

Instructions
 

  • Wash and cut potatoes into bite-sized chunks.
  • Place in a large pot, cover with salted water, and bring to a boil.
  • Simmer until potatoes are fork-tender (15–20 minutes).
  • Drain and allow the potatoes to cool.
  • In a large bowl, whisk together the mayo, mustard, garlic powder, salt, and pepper.
  • Once the potatoes are cooled, add the potatoes, eggs, and red onion to the bowl with dressing.
  • Fold gently to coat everything without mashing.
  • Cover and refrigerate for at least 1 hour before serving.
  • Garnish with fresh herbs and serve cold.
