- 2 lbs Yukon Gold or red potatoes
- 1 cup mayonnaise I prefer the Chosen Foods or Primal Kitchen brands
- 2 tbsp Dijon mustard
- 1 tsp garlic powder
- 3 hard-boiled eggs chopped
- ½ cup red onion finely chopped
- ½ tsp salt
- ¼ tsp ground pepper
- Fresh parsley or dill optional for garnish
- Wash and cut potatoes into bite-sized chunks. 
- Place in a large pot, cover with salted water, and bring to a boil. 
- Simmer until potatoes are fork-tender (15–20 minutes). 
- Drain and allow the potatoes to cool. 
- In a large bowl, whisk together the mayo, mustard, garlic powder, salt, and pepper. 
- Once the potatoes are cooled, add the potatoes, eggs, and red onion to the bowl with dressing. 
- Fold gently to coat everything without mashing. 
- Cover and refrigerate for at least 1 hour before serving. 
- Garnish with fresh herbs and serve cold.
